A few months ago, I was lucky enough to attend a VIP whisky and barbecue tasting with renowned barbecue chef Adam Perry Lang. That night, I learned plenty about barbecuing and whisky, as Mr. Lang shared his recipes for George Dickel Whisky barbecue rubs. It was a delicious, interesting evening.
Last week, Adam Perry Lang appeared on Jimmy Kimmel Live! to show viewers what I learned that night – that whisky and barbecue go hand in hand.
Chef Perry Lang makes his barbecue handmade and with great intention, just like those down in Tullahoma, Tennessee, who hand craft George Dickel Tennessee Whisky. It is a natural pairing; George Dickel has the perfect depth and richness to incorporate into barbecue dishes and, since sauce can add so much flavor to barbecue, Chef Perry Lang shared how he created a glaze using George Dickel No. 12. Additionally, Chef Perry Lang visited the George Dickel distillery to pick out a special holiday gift for Jimmy Kimmel Live! The gift, a barrel of George Dickel 9-Year-Old whisky, provided a one-of-a-kind whisky to Jimmy and members of the audience. George Dickel Whisky Holiday Roast Baste
-1 cup George Dickel No. 12
-1 Tbsp butter
-1/2 cup Finely diced shallots
-2 tsp Freshly ground black pepper
-1/2 cup cubed cold butter
– In a small pan over low heat, sweat shallots in butter until golden then add black pepper
– remove from flame and pour in whisky, light by tilting the pan, or with lighter. Be careful of the flame
– cook until the alcohol burns off. Remove from fire and swirl in cold cubed butter
– Add salt to taste
